Grilled Plums with Baby Arugula

Chef’s Notes

Any other stone fruit will work for this recipe such as peaches, nectarines or apricots.

Cook: 10 minutes


4 ripe plums cut in half and pitted

2 small red onions, peeled and sliced

4 cups baby arugula

2-3 tablespoons sherry vinegar

2 tablespoons vegetable broth

Black pepper to taste (optional)


1. Put the plums flesh side down and the sliced red onions on a hot grill for about

3-4 minutes on each side, then set aside.

2. Put half of the grilled onions in a food processor with the vinegar and

vegetable broth and blend the ingredients for about 20 seconds.

3. Combine all ingredients and arrange on 4 plates.
